Company Introduction According to the definitions given in the International Agreement administered by the International Olive Oil Council (IOOC) , the Codex Alimentarius (WHO) and the EEC Regulation, the Virgin Olive Oil is: "The oil obtained from the fruit of the olive tree solely by mechanical or other ohysical means, under conditions, particularly thermal conditions, that do not lead to alterations in the oil, and wich has not undergone any treatment other than washing, decantation, centrifugation and filtration. " Our Virgin Olive Oil is, therefore, strictly a fruit juice and is treated as such from the agronomic point of view and during all the steps leading up to the extraction of the oil from the fruit pulp.
